As most chefs do, Josh Kabat started off his career in the kitchen working in the dish room at the Aurora Inn in Aurora Ohio. After working his way up to head line cook, he realized he might have found his knack. He decided to attend the University of Akron’s culinary arts program. Working at an Akron restaurant called Treva in order to pay his way through college, Josh worked under Chef Jarred Kirby and developed a similar liking for spicy Asian and Pacific Rim flavors that his chef had become known for with his Australian background.
Josh’s’ work ethic got noticed by iron chef Michael Symon, so he headed north to Cleveland for a stint at the original Lola in Tremont. After a three year run, Josh decided to go into business for himself, but not in the food industry. A five year run as owner of the Legendary Peabody’s concert club gave Josh his rock n roll cred, which allowed him to return to his passion, and in 2007 along with future wife Kiaran Daley, where they opened and operated Reddstone. A funky neighborhood eatery in the Godon Square Arts District with a heavy rock n roll vibe and some of the best pub fare in the city. After five years at Reddstone, the couple decided to leave the bar business and venture into the sandwich and pickle business. In March 2012 the pair opened Cleveland Pickle to rave reviews boasting a fresh twist on what has been described as one of “the most talked about sandwich shop’s in Cleveland in years”. Their retail line of “Cleveland Pickles” are also the talk of the town and are currently being featured at some of Cleveland’s finest restaurants, retail establishments and hottest farmers markets. You can now find Cleveland Pickle being distributed across 11 different states!
